Casa Marrone Appassimento- 2022
Puglia, Italy
Appassimento is a wine making method by which the grapes are dried in the sun before the winemaking starts. Typically, a previously pressed must is then added to these whole, dried grapes and then after alcoholic fermentation is finished, the whole ferment is then pressed. The result is rich and full with fig and jam notes that are perfect with a big meal involving turkey and stuffing and it’s wine, so ya know it pairs great with annoying family members, too.

Another brand from the Mercer Family Winery, Subsoil’s very terroir-focused wines almost tell a story; the story of a flood from over 20,000 years ago that carried with it soil types and sediment unearthed from a millennium of the forming planet we live on. This Grenache is great. Concentrated acidity, red fruit, and full-rich mouthfeel with an herbal finish.
