After crushing the grapes and racking the juice off for continued fermentation after maceration, the skins are dried and then the wine is “re-passed” through the skins, picking up all the tannins and natural yeast and rich flavors that were left behind! It’s so beloved in fact, that it received its own DOC in the Verona.
